The best part about summer is the warm weather and with the warmer weather still gracing us with its presence a nice summer salad is the perfect meal. Most of us tend to have lighter appetite at this time of year, and no one wants to be standing by the stove when its 30 degrees outside. Here is a perfect summer salad recipe the is packed with nutrients, antioxidants and protein. It is light and guilt free but will leave you feeling full and satisfied.

Makes a single serving

Grilled Chicken Breast.

  • 1 chicken breast
  • 1 ½ teaspoons extra virgin olive oil
  • sprinkle of Cayenne pepper
  • Salt and Pepper to taste

Heat oven or Barbecue to 350. Cook for 30 – 35 minutes (or until chicken is thoroughly cooked).

Dijon Mustard vinaigrette

  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 table spoon white wine vinegar
  • 1 garlic clove, finely minced
  • 1 ½ cup extra virgin olive oil
  • Salt and Pepper to taste

Mix together in jar or salad dressing container.

Mix together

  • Spring mix salad
  • 1 tablespoon goat cheese
  • half a cup of fresh blueberries
  • add with grilled chicken
  • top with Dijon mustard dressing.

Pair this with a non-alcoholic grapefruit cocktail.

  • 80ml juice from a ripe pink grapefruit.
  • Juice of half a lemon.
  • 40ml sugar syrup (made with equal parts sugar and water, heated until sugar is dissolved then cooled)
  • Cold sparkling or soda water.
  • 2 x mint sprigs.
  • Crushed ice.

Enjoy this simple and light recipe to yourself or share with others. Include this salad as the main dish at a dinner party and offer light hors d’oeurves to start. Finish with the simple and refreshing non-alcoholic cocktail instead of a heavy dessert.
