So today’s theme is healthy treats. Here are a couple delish and quick recipes that you can use when you’re craving something sweet.
The first one “Energy Bites” was given to me by a friend, and they’re awesome because unlike my other protein cookies these ones don’t need to be baked. Also there super simple so as long as you know how to measure it’s pretty hard to mess these up!
Energy Bites
1 cup oats (not quick oats)
½ cup choco chips
½ cup peanut butter (no added sugar!)
½ cup ground flaxseed
1/3 cup honey
1 tsp. vanilla
Mix by hand or with an electric mixer, then roll into balls and store in container lined with wax paper, don’t forget to keep in the fridge!
The next recipe I got from a “certain” beach downtown that sells them in the summer, but really they are so good you can enjoy them no matter what time of the year it is.
Chocolate Covered Bananas
4 ripe bananas
1 ½ cup chopped peanuts
4 oz. chocolate (milk or dark, whatever you prefer)
Wax paper?wood sticks
Line a tray/pan with wax paper
Pierce the bananas with your sticks and place on your tray, freeze for 2 hours. (For children its usually better to cut the bananas in half first.)
Double boil your chocolate until melted.
Coat the banana with the melted chocolate and sprinkle with nuts.
Place the bananas back on the wax paper and freeze for another 2 hours.
Take them out of the oven and you’re good to go!
